Chocolate icing

  1. Whisk the egg yolks and icing sugar together until pale and thick.
  2. Melt the chocolate and butter together and stir into the egg mixture.
  3. Leave the icing to cool.

Mars bar icing

  1. Put the Mars bars in a pan with the butter and melt them together over a low heat.
  2. Take the pan off the heat and whisk the egg yolks in very well.
  3. Pour the icing over the cake once it has been assembled.

Assembly

  1. Whip the cream. Chop 2 Mars bars and stir them into the cream. Sandwich the two brown sugar meringue layers together with the cream.
  2. Top with the icing (or melt some chocolate and let it drip over, see tip).

Notes

  • Don't spread icing on top of the cake, it is too thick. It is better, and prettier, to melt chocolate and let it drip over.
