Duck seasoning
Ingredients
- ½ cup sugar
- 1 cup salt
- ½ cup chicken seasoning (The dash is a ditto mark for 'cup'. Icelandic kjúklingakrydd is a ready-mixed seasoning salt for chicken; use any poultry seasoning blend.)
- 1 tbsp paprika
Method
- Mix everything well and store in a sealed jar.
- Rub a moderate amount over the duck, inside and out, a few hours before cooking.
